Patriotic Cupcakes.
I get lots of requests to make my cupcakes and for the upcoming holiday my mom suggested I make a red, white, and blue swirl version. This time I didn't do anything special with the batter - I used my all-time favorite mix brand which is Pamela's. To make these cupcakes I made the batter and then scooped out one cup of it into one bowl and one cup into another. I added red food coloring to one and blue to the other.
I filled cupcake wrappers about halfway full then added a dollop of blue and a dollop of red to each. On some of them I layered more vanilla mix on top - each cupcake is different!
Then, I took a toothpick and swirled it around in each cup. Baked them and voila! Patriotic cupcakes!
I wanted to make swirl frosting for some of them also so I pulled out about 1/4 cup of the frosting and mixed red food coloring in. I packed the white frosting into one side of my frosting decorator press (you NEED one of these if you don't have one!) and the red into the other.
That was a super easy way to get a fancy red swirl for some of the cupcakes like this:
Here is the super yummy and easy frosting recipe that I use:
Nikki's Vanilla Frosting
4 cups confectioner's sugar
1 stick butter, softened
2 Tbsp. plus 1 tsp. room temperature water
1 1/2 tsp. vanilla extract
I beat the butter with a hand mixer first and then add the other ingredients in. Mixture should be fairly stiff. If you need to you can add more water, 1 teaspoon at a time. For a decorator press you want the frosting to be stiffer. I like this recipe because it is soft and sweet yet dries to hold a great shape.
