Chewy Almond Cookies

1a These cookies are causing quite an issue around here. The issue is that once I make a batch, they are nearly gone before I can even sit down and have some. The first time I made them Chris devoured a dozen. In one sitting.

The good news - these cookies are totally pure, vegan, free of any bad stuff at all. They are sweetened with honey. No added sugar. The first time I made them I thought NO WAY these will be sweet enough for my ridiculous sweet tooth. I was wrong! They are so chewy, perfectly flavored and guilt free. With almond flour as the base, these cookies are high in protein, fiber, calcium and iron.  They are also incredibly simple - one bowl, 10 minutes in the oven and BAM. Snack time!

Best Paleo Cookies EVER aka Chewy Almond Cookies

The ingredients are simple folks:

2 cups almond flour

1/2 tsp. baking soda

1/4 tsp. sea salt

6 Tbsp. local honey

4 tsp. coconut oil (I use liquid coconut oil; if you're using solid, melt it first)

2 tsp. vanilla (click here for my gluten free, corn free, allegen free, vegan recipe for vanilla)

That's it!

 

The directions are even more simple:

  1. Combine all ingredients in a bowl (or if you're lucky enough to have a Kitchen Aid, use that).
  2. Roll into 1 inch balls and place on cookie sheet - I get about 15 cookies out of this recipe but I've fit them on one cookie sheet with no problem. Flatten them slightly with the palm of your hand.
  3. Bake in oven  preheated to 350 degrees for 8-10 minutes. You'll know they're ready when they start to golden brown.

*Sweet and savory left the caution that these cookies should cool ON THE COOKIE SHEET for 5-10 minutes before removing from the pan. Heed this advice! It will be the longest 10 minutes of your life but it will produce the most perfect cookie.
